The South African restaurant and hospitality industry is once again bracing itself for the impact of a Covid-19 wave during peak summer season as a new variant, Omicron, was identified last month.
According to scientists and the World Health Organization, Covid-19 spreads mainly when “aerosols or droplets containing the virus are inhaled or come directly into contact with the eyes, nose, or mouth. The virus can also spread in poorly ventilated and/or crowded indoor settings, where people tend to spend longer periods of time. This is because aerosols remain suspended in the air or travel farther than 1 metre (long-range)”.
So what can restaurants do to improve their ventilation and airflow and thereby minimise – or even eliminate – any risk to patrons?
