For the Love of Fruity Braai Marinades and Simple Sides

National Braai Day (24 Sept) is a great time to fire up the flames and rustle up quick and easy fruity braai marinades and yummy braai side dishes to share with friends and family.

Here’s a round-up of 6 great recipe options from Rhodes Quality, perfect for any braai occasion, from a fruity spare rib marinade, exotic mango chicken, a peachy BBQ basting sauce, a boerewors braai pie and other easy braai sides.

Rhodes Quality Fruity Spare Rib Marinade

Serves: 6

Preparing spare ribs from scratch is easier than you think, follow this simple recipe for any braai occasion.

Ingredients

1 x 440 g can Rhodes Quality Pineapple Rings in Light Syrup, drained, syrup reserved
250 ml (1 C) Rhodes Quality Smooth Apricot Jam
1.5 kg pork rib racks
2 bay leaves
5 peppercorns
3 parsley sprigs
2 garlic cloves, unpeeled
1 litre prepared chicken stock
65 ml (¼ C) soy sauce
30 ml (2 T) brown sugar
30 ml (2 T) white wine vinegar
2 garlic cloves, crushed
5 ml (1 t) ground ginger
1 ml (¼ t) cayenne pepper
Salt and pepper

Method

1.     Place the ribs in a single layer in a roasting pan and add the bay leaves, peppercorns, parsley, the whole garlic and prepared stock.

2.     Cover tightly with foil and cook in a preheated oven at 180 °C for 1 hour.

3.     Remove from oven and cool in the stock.

4.     To make the glaze, mix the Rhodes Quality Smooth Apricot Jam, reserved pineapple syrup, soy sauce, sugar, vinegar, crushed garlic and spices and season to taste.

5.     Braai the ribs and the Rhodes Quality Pineapple Rings over hot coals, basting with the glaze until browned and sticky then serve sliced.
