Making a sumptuous summer dish with some refreshing seasonal vegetables is the multi-award-winning Chef George Jardine of Jordan Wine Estate and Jardine Restaurant. Born to a family of Scottish chefs, George Jardine spent many years honing his skills in Europe’s Michelin-star kitchens before moving to South Africa in 1997 to open Novelli at The Cellars. During his tenure, the hotel was named one of Conde Nast’s Top 50 Dining Destinations in the World.
Fast forward twenty years – and stints in Indonesia and Malaysia – and Chef George finally returned to SA to open Restaurant Jardine first in Cape Town’s CBD. His restaurants have consistently placed in the Eat Out Awards for nearly a decade, have placed in San Pellegrino’s Top 100 restaurants in the world. Since reopening post-lockdown, he currently runs two Stellenbosch establishments with a lean and efficient staff of 8 across both.
Despite his long list of accolades, he remains incredibly humble. “The way you win awards is by not focusing on the awards,” he says, “the awards are a double-edged sword in that they feed your ego, and once you do this for your ego, you’ve lost the reason why people enjoyed the experience in the first place.” Expect more of his refreshing and candid wisdom as you cook with him – as well as a healthy helping of that dry British humour we all know and love!

“I love cooking with aubergine,” says George, “they’re amazing right now and perfect for the season. This dish is easy to do in large numbers, too, while still maintaining a beautiful presentation. It has a bit of Mediterranean-Scottish-Asian influence so these flavours are something to look forward to.”
