3 Year Diploma: Advanced Culinary Arts, Advanced Pâtisserie & Specialist Culinary Field

ICA’s flagship 3-year programme equips students with comprehensive credentials, encompassing full chefs qualifications, including advanced cooking and advanced pâtisserie and a chosen specialist culinary field.

The ICA is the only culinary institution offering additional career options within the hospitality industry. Specialist Culinary Field options include Media Communication, Product Development and Professional Wine Studies & Event Coördination. Employment opportunities are both extensive and inspiring, with career paths leading to product development for global companies, food stylists, writers and editors for high-end publications, occupations in the thrilling world of television as well as sommeliers in top SA restaurants and international Michelin-starred establishments.

  • City & Guilds Diploma in Food Preparation & Culinary Arts – 8064-01
  • City & Guilds Diploma in Food Preparation & Culinary Arts (Pâtisserie) – 8064-02
  • First Aid Level 1
  • City & Guilds Certificate in Food & Beverage Service – 8066 (optional)

2 Year Diploma: Culinary Arts & Advanced Pâtisserie

This highly specialized course provides students with the essential theory and practical training to succeed in the ever-evolving world of fine pâtisserie. The course includes an international diploma and invaluable practical training with industry partners who are at the forefront of this unique culinary field. This is a course for the individual with patience, precision and absolute perseverance. Head of Faculty and senior pâtisserie lecturer, Merizle Mitrovich, is the only lecturer in the country to have received an international City & Guilds Medal of Excellence.

The ICA welcomes prospective culinary arts candidates to our annual Open Days, usually held during the first and third terms of each year.

This special event is tailor-made to showcase the Institute of Culinary Arts and addresses commonly asked questions whilst providing in-depth information to prospective candidates, all in the beautiful setting of our campus just outside of Stellenbosch.
