A celebrated plant-based chef and wellness advocate, UK based Chef Bettina Campolucci Bordi will showcase her innovative, zero-waste, and sustainable approach to cooking at The Good Life Show in Cape Town. Here’s a taste of what to expect.
Ingredients (Makes 2 portions)
1 pear
1 apple
1 orange, peeled
130g (4 1/2 oz/1 cup) precooked quinoa (any color)
Juice of 1/2 orange
Juice of 1/2 lemon
1 tablespoon raisins
1 tablespoon chopped almonds
1 teaspoon ground cinnamon
1 teaspoon cardamom
1 pinch of ground cloves
Plant yogurt, mint leaves,
or seasonal fruits, to serve

Sesame seeds
Chopped nuts
Method
Chop the apple, pear, and orange into small squares (smaller than bite-size) and put them in a bowl.
Add all the remaining ingredients and give it a good stir.
Enjoy with a dollop of plant yogurt, a few mint leaves, or a sprinkling of seasonal fruits.
